I have been testing possible layouts, and here is where I am so far:

I think this would be easily readable on either a tablet or on a computer monitor. Simple enough, not too cluttered, but would allow for large photos.

It would be a single page in landscape mode. The page format I am using is 10" x 7.5", which would then fit on an 8.5" x 11" page.
